On Sundays I love to eat breakfast in bed, get snug under the covers and read a good book {I’m currently reading You Can Heal Your Life by Louise Hay}
I start my mornings off with hot lemon water and some breathing {If you saw my Insta story and last post you will see that I spent the whole day hiking in the mountains yesterday “recharging” my mind/soul!}
Anyways, this mornings breakfast is a vegan pitaya {aka dragon fruit} smoothie bowl!
Ingredients:
Serves 3
- 2 small dragon fruit/pitaya
- 2 small bananas {freeze these for a thicker consistency}
- 2 cups of vegan coconut yoghurt {you can also use low-fat yoghurt}
- 1 cup ice
Method:
Blend all ingredients in a high-speed blender for 30 seconds.
Pour into bowls and add toppings, you can use so many combinations for this!
My toppings for today are:
- 1 cup Strawberries
- 1 kiwi fruit
- 1 handful of chocolate drop & raspberry granola
