Festive Breakfast Muffins

And just like that, another year comes to and end.

These festive muffins are full of cranberries and have the perfect citrus flavour, so good that you will want them for breakfast well into the new year!

  • 250g plain flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • 100g coconut sugar
  • ¼ tsp nutmeg, ground
  • 125ml milk of choice
  • 1 large free range egg
  • 1 cup raisins and cranberries
  • 75ml vegetable oil
  • 1-2 tbsp orange zest
  • 50ml orange juice
  • 1 tsp cinnamon, ground
  • 1 tbsp organic brown sugar, for topping


Place oven rack on the middle shelf, preheat to 200°C and line a muffin tray.

In a large bowl mix the flour, coconut sugar, nutmeg, cinnamon, baking powder, baking soda and orange zest.

In a measuring jug add the milk, orange juice, egg, oil and whisk to combine.

Add the liquid to the flour mix and combine well. Once mixed, fold in the cranberries and raisins.

Spoon the mixture evenly into the muffin tray and top with brown sugar.

Bake in the oven for 15-20 minutes or until a knife inserted comes out clean and allow to cool on a cooling rack.

Serve with a cup of hot chocolate and enjoy the Christmas movies!
