Festive Chocolate Bark

“Never under-estimate the power of chocolate”

If you like the combination of sweet and salty then these are for you. Not to mention they are full of crunchy nuts and chewy cranberries.

My usual weekend tradition is a big bowl of popcorn sprinkled with chocolates right in front of the TV, either catching up on series or watching classic movies and these cheeky little squares are just like all of that in one go.

Ingredients

  • 100g dark chocolate, I like 85%
  • ¼ cup mixed nuts
  • ¼ cup dried cranberries
  • 1 pinch pink Himalayan salt

Method

Prepare a small plate or tray with baking paper and set aside.

Roughly break up the chocolate and add to a small bowl. Pour boiling water into half of a large pyrex bowl and gently place the small bowl of chocolate inside. Allow to melt for 5-10 minutes mixing from time to time.

While the chocolate melts roughly chop the nuts and set aside.

Once the chocolate has melted, pour evenly onto the prepared tray and top with chopped nuts, cranberries and salt.

Place into the fridge for 15-20 minutes or until completely set. Slice or break into chucks and store in the fridge for up to 2 weeks (if they last that long)
