Fig & Coconut Ice Cream

Before we head into autumn I’m squeezing in one last summers day treat that will make your hearts melt, with just only three ingredients! Our trees have been bursting with figs at this time of year and I’ve been lucky enough to get them before the birds do, from figs on toast to smoothies.. this easy peasy ice cream is here to stay.


  • 2  cans coconut cream
  • 2 cups fresh ripe figs (remove stems)
  • 1 tbsp organic maple syrup / agave



  1. Add the coconut cream, figs and maple syrup to a high speed blender or food processor and blend on high for 60 seconds.
  2. Place jug straight into the freeze overnight.
  3. Once set, take out the freezer and allow to sit for 10 minutes.
  4. Heat an icecream scoop in a glass of hot water and scoop into chocolate cones
