So, we searched and searched for the perfect “healthy” brownie… we have found the pot of gold!
These brownies are healthier gluten-free option and are simply irresistible!!
- 300 g dark chocolate
- 2 tbsp coconut oil
- 3 – 4 ripe hass avocados, pitted and sliced.
- 1/2 cup of maple syrup (honey is also fine)
- 1 tsp vanilla extract
- 3 eggs, at room temperature
- 1/2 cup raw cocoa powder
- 1/2 cup coconut flour
For the Avocado Frosting:
- One medium sized has avocado, pitted and sliced
- 3 tbsp raw cocoa powder
- 3 tbsp maple syrup
Preheat the oven to 200 degrees. Line a 9 x 13 baking tray with baking paper, allowing some extra space on the sides to overhang. Put the dark chocolate and coconut oil in a bowl over a medium heat allowing the water to simmer without the bowl touching it.
Melt the chocolate, stirring until smooth. Remove form heat and set aside.
Place the avocado into a food processor or blender (I used my NutriBullet) and blend until smooth.
Measure this until you have 1 cup of avocado puree.
Stir the avocado, maple syrup (or honey) and vanilla extract into the melted chocolate adding one egg at a time, making sure each egg is completely mixed before adding the next one.
Stir the coconut flour and raw cocoa powder until the mixture is smooth.
Pour the batter into the prepared tray and spread evenly making sure the corners are also filled whilst smoothing the top.
Bake for 15-20 minutes (depending on your oven) or until the top is firm to the touch. Remove from oven to cool completely, only lift out the tray once completely cool.
Place all frosting ingredients into the blender or food processor. Bled the frosting until smooth adding more coca powder or maple syrup as needed. Spread the frosting over the top of the brownies and cut into squares.
Store in an airtight tupperware for up to 3 days.
