Peanut Butter Bliss Balls

Since I’m madly in love with peanut butter and always find myself getting a spoon into the tub I decided to make these delicious peanut butter balls, perfect for snack time or after 8!

You only need 6 ingredients, under 10 minutes to make them and they are gluten free.

Ingredients:

Makes 15 – 20

  • 1 cup crunchy peanut butter
  • 1/4 cup honey (maple syrup can be used but honey is better)
  • 2 tsp vanilla extract
  • 1 1/2 cups of gluten free oats
  • 1/2 cup desiccated coconut
  • 1/3 cup chocolate chips
  • 3 tsp filtered water
  • Pinch of salt

Method:

In a large mixing bowl, add the peanut butter, honey and vanilla extract and stir.

Add the oats, desicated coconut, salt and chocolate chips.

Mix well to combine. Add 1 teaspoon of water at a time until the mixture forms a dough like consistency.

Using a spoon, roll the mixture into small balls

Place in freezer for 30 minutes in an air tight container (or freezer over night)

Store in the fridge for up to 1 week or eat straight out the freezer. Give 5 minutes for balls to soften.
