Rosemary, Olive & Goats Cheese Muffins

As much as we like sweet treats, we also love savoury ones!!

Here is a light fluffy savoury muffin recipe. These are perfect for a picnic, lunch box or even afternoon tea!

Ingredients:

  • 2 tsp baking powder
  • 250g flour (gluten free flour can be used)
  • 100g grated mature cheddar (we used 18 months matured)
  • 3 free range organic eggs
  • 50ml milk
  • 50ml olive oil
  • 2 tbsp fresh rosemary
  • 100g pitted kalamata olives
  • 100g goats cheese
  • salt & pepper (for seasoning)

Method:

Add the baking powder, flour and cheddar cheese into a large mixing bowl.

Whisk the eggs in a separate bowl and add them to the mixture.

Add the milk, olive oil and season.

Finely chop the fresh rosemary (reserving some for the end) and chop the olives, add them to the mixture and mix well.

Spoon half the mixture into a well greased muffin tin. Cut the goats cheese and add to each muffin, then add the remainder of the mixture on top of these.  Top them off with the left over rosemary.

Place into the oven and bake at 180 degrees for 20 – 25 minutes or until golden brown and cooked through.

Serve with onion marmalade and cream cheese!
