Here’s a fully loaded veggie breakfast you can make with pretty much anything you have in the fridge 🥑

What’s in mine ~

1/2 cup mushrooms, sliced
1/2 red onion, diced
1 tsp garlic, crushed
1/2 cup cherry tomatoes, halved
2 small zucchini’s, sliced
1/2 tsp chili flakes
1/2 tsp mixed herbs
1 tsp coconut oil, for cooking
1-2 slices of rye bread

Heat the coconut oil in a frying pan over a low-medium heat and add the onions + garlic and cook for 3-4 minutes. Add all the other prepared veggies and cook until soft, about 5-6 minutes. Toast the bread to your liking and spread with basil pesto, hummus or have it plain and top with veggie mix + fresh avocado🍴

Here’s a quick Monday morning granola you can enjoy for brekkie or as a snack 🥄

#nobake Superfood Granola ~

2 cups @therefillerysa rolled oats
1 cup almonds or macadamias
1 cup sunflower seeds
1/2 cup raw cacao nibs
1/2 cup cranberries or raisins
1/2 cup chia seeds
1/2 cup goji berries
1/2 cup @soaringfreesuperfoods golden berries
1/4 cup lucuma powder {optional}
1/4 cup hemp seeds

Add the oats + nuts + sunflower seeds into a blender and pulse until roughly chopped. Add to a large mixing bowl along with all the other ingredients and combine. Store in a glass jar and serve with coconut yoghurt / nut milk + drizzle of coconut nectar. 🥣

Here’s a comforting sleep mylk for a week like this when we are all back to doing all the things ✨

Sleepy Moon Mylk ~

1 cup @ecomiloficial almond milk ~ plus extra for frothing
1 tsp coconut nectar
1 tsp lavender {optional}
1 tsp @lalunablends Sleepy Dream Time tea ~ available online and at @therefillerysa
1/4 tsp ground cinnamon
1-2 capsules @soaringfreesuperfoods Ashwaganda

In a small pot, over a low/medium heat add the almond milk + Sleepy Dream Time tea + lavender {if using} + coconut nectar + cinnamon + Ashwaganda and gently whisk. Allow to heat slowly, stirring often. Strain and pour into a mug. Top up with frothed milk or drink as is 🌙

Monday mornings never looked so good 🌧

Moringa + Pistachio Oats ~

1 cup @therefillerysa rolled oats
2 cups water
1 cup @rudehealth coconut milk
1/2 tsp @nomuchirps vanilla paste
1 tbsp chia seeds
2 tsp @soaringfreesuperfoods moringa powder

In a small pot, bring the almond milk + water to a boil and add oats. Turn down to a simmer and add the chia seeds + vanilla + moringa. Allow to cook with the lid on for 20-25 minutes, stirring occasionally. Top with toasted coconut + pistachios + golden berries 🥄

Here’s a fully loaded superfood smoothie to get your Monday going 🌿

1 ripe avocado
250ml nut milk
½ cucumber
1 tsp spirulina
1 tsp cashew nut butter
2 medjool dates, pitted

Blend together in a high-speed blender {I used an @omniblendsa} and serve 🥑

**for added sweetness you can add frozen banana

We are off for a little relaxing getaway 🌳🚙

First recipe of 2021 and it’s such a flippen goodie! If there’s something I love in summer it’s vibrant crunchy vegetables 🌿

Fresh Rice Paper Rolls 🥕

6 rice paper sheets
½ cucumber, julienned
2 carrots, julienned
50g Rice / Vermicelli noodles
50g steamed corn ~ tinned corn can be used
¼ red cabbage, shredded
2 tsp black sesame seeds
1 tbsp fresh lime juice

Soak the rice noodles in boiling water for 10 minutes, drain and set aside. In a bowl, add the cucumber + carrots + corn + red cabbage + sesame seeds + lime juice and mix. Soak each rice paper sheet in warm water until soft and translucent. Remove and place onto a clean workspace and add fresh ingredients down the middle, leaving space at the bottom and on both sides. Add a layer of the rice noodles and fold from the bottom up and from side to side. Repeat with remaining rice paper sheets and serve with soya sauce / sriracha / peanut sauce. 🥢

**if your fingers stick to the rice paper make sure to wet them prior to rolling.

Winding #2020 down with this simple overnight oat recipe ~ what better way to wake up and start the new year with a superfood breakfast you can eat in bed? 🥣

1/2 cup @therefillerysa rolled oats
2 tbsp hemp seeds
2 tbsp @soaringfreesuperfoods chia seeds
1 tbsp cinnamon
2 tbsp @antoniasbotanicals almond butter
1 cup nut milk
1 ripe banana, mashed
1/4 cup fresh raspberries

In a small bowl mix together the oats + chia seeds + cinnamon + hemp seeds + oat milk + almond butter + banana and place into the fridge for 8 hours or over night. Serve with fresh raspberries + extra cinnamon and nut butter 🥄

**if you are limited for time, 2-4 hours of soaking will do.

It’s a muffin kinda morning 🌧 I’m honestly

It’s a muffin kinda morning 🌧

I’m honestly loving this weather, everything feels extra cozy and the Christmas tree lights make the room feel so magical 🎄

Blueberry & Banana Muffins ~

200 @therefillerysa spelt flour
200g organic coconut sugar
½ tsp baking power
1 tsp baking soda
2 large ripe bananas
3 tbsp @crede_natural_oils coconut oil or any other neutral oil
3 tbsp almond or coconut milk
½ cup @checkers_sa blueberries + extra for topping
1 tsp @robertsonsspice ground cinnamon

Preheat the oven to 190 degrees C and line a muffin tray with paper cups. In a mixing bowl whisk the spelt flour + coconut sugar + baking power + cinnamon + baking soda. In a separate bowl, mash the bananas and mix in the coconut oil + nut milk and add to the dry ingredients, combine well. Gently fold the blueberries into the muffin mixture until well combined. Distribute evenly into each muffin holder and top with blueberries + extra cinnamon. Bake in the oven for 25 minutes and allow to cool in the muffin tray for 5 minutes before moving to a cooling rack.
